Part-I
THE HOSPITALITY INDUSTRY : Evolution of hospitality industry. Sectors in hospitality industry-commercial & non-commercial. Relation of hospitality industry with tourism, economy and environment. Scope and importance of hospitality industry in India.
FRONT DESK DUTIES : The Guest Cycle, Communication at the Front Office Logbook, Telephone Handling, Message & Mail Handling, the Switch Board and Housekeeping Communication, Guest Billing, Security Functions. Use of computer application in the front office systems.
INTRODUCTION TO PROFESSIONAL CATERING : Food-microbiology & nutrition. Balanced diet. Food Laws- the prevention of food adulteration act, 1954. Menu planning- types of menu and principles of menu planning.
FOOD AND BEVERAGE PRODUCTION : Quality Food Production, Planning and Management including principles of Applied Food Service Sanitation and Service Management. An institutional kitchen of basic food production and a theme meal event planned, prepared and served by the students.
HOTEL ACCOUNTING & AUDITING : Financial Statements, Statistical Reports & Their Preparation. Cost Control Guidelines, Auditing In Hotel Industry- Meaning, Nature and Scope.
